Whoopie Pie

 

Whoopie Pie Recipe from a box cake mix 

Makes 12 whoopie pies

 

  • 1 box cake mix
  • 3 eggs
  • ½ cup water
  • ½ cup oil

 

  1. Preheat oven to 400 degrees.
  2. Spray whoopie pie pan with non stick spray
  3. Beat all ingredients on medium low speed until well combined
  4. Drop 2 tablespoons of batter into each cavity. Tap pan so batter spreads to edges.
  5. Bake for 8 to 10 minutes.
  6. Let cool for a few minutes, remove from pan and place on cooling rack.
  7. If you over filled the cavities and your whoopie pies came up over the edge, they may be too thick. Just take a sharp knife and cut off the excess bottoms.

 

 

Whoopie pie filling

 

  • 2 sticks of butter
  • 3 cups of confectioners’ sugar
  • 2 tsp vanilla
  • ¾ cups marshmallow fluff

 

  1. Combine all ingredients and beat till fluffy.
  2. Place filling in a piping bag fitted with a large open star tip.
  3. Pipe filling on the bottoms of half of the cookies, top with remaining cookies.
