Soft Cream Candy Filling

  • 3 Tbsp. Butter (softened)
  • 3 Tsp. Meringue Powder
  • 3 Tbsp. Light Corn Syrup
  • 2 Tbsp. Warm Water
  • 2 Cups Fondant Sugar
  • Flavoring
  • 1 Tsp. Invertase 
  • Food color
  1. In a small bowl combine the first four ingredients and beat till fluffy with a hand mixer.
  2. Add 2 cups Fondant Sugar and mix well.
  3. Mix in Flavoring, Invertase and a coordinating paste food color for a light tint. Do not add additional water.
  4. Be aware that your candy fillings will become smoother over the course of a couple hours. Fondant sugar will continue to dissolve even while in your filled candies.
  5. For a firmer center, add more Fondant Sugar.
