Microwave Caramel Recipe

1/4 cup butter
1/2 cup white sugar
1/2 cup brown sugar (dark brown sugar will make a darker caramel)
1/2 cup light corn syrup
1/2 cup sweetened condensed milk

Combine all ingredients, stir and place n the microwave.

2. Cook 6-7 minutes, stirring every 2 minutes.

3. Time will depend on your microwave; mine is 1000 watts and took 6 minutes.

4. If making salted caramel add (to taste) at this time

5. Pour into lightly greased 8X8 inch pan, for thicker caramel use a 6X6 inch pan.

6. Let cool

7. Cut into squares and wrap in wax paper and store in air tight container.

8. Can be dipped in chocolate.

Makes:  approximately 1 pound 2 ounces of caramel


Traditional Caramel Recipe


    2 cups sugar

    1 cup light corn syrup

    2 cups heavy cream

    1⁄4 cup butter

    1⁄2 teaspoon salt

    1 teaspoon vanilla extract

Butter an 8 X 8 Inch Square Pan


  1. Combine sugar, corn syrup, butter and 1 cup of heavy cream in a 3 quart heavy sauce pan.
  2. Bring to a rolling boil on medium high heat, when temperature reaches 230 degrees slowly add the additional heavy cream so the mixture never stops boiling.
  3. Stir constantly till temperature reaches 242-244
  4. Remove from heat; add the vanilla extract.     
  5. Immediately pour into a buttered pan. Let cool before cutting into squares.

Makes approximately 2 ½ pounds
