No Bake Chocolate Coconut Caramel Cookies

This No Bake Chocolate Coconut Caramel cookies recipe is our version of a Samoa girl scout cookie. This copy cat Samoa cookie recipe will get you through the long months when girl scout cookies are out of season. While they aren’t exactly the same, they are pretty darn addicting and delicious! 

IMG_0299No bake cookies are kinda our thing, because they take little time but always make a huge impression. Let’s face it, who wants to turn on the oven when it’s hot outside? This no bake cookie recipe is one you’ll definitely want to pin for later! 

Ready to make No Bake Chocolate Coconut Caramel Cookies? 

Thing’s you’ll need:

1 Lb Merckens Vanilla Caramel <click here to buy>

1 Lb Merckens Dark Candy Coatings <click here to buy>

1/2 cup Desiccated Coconut <click here to buy>

Plus more Desiccated Coconut for sprinkling on top.

1 Box Vanilla Cookie Wafers

Instructions-

Step one:

Break off quarter size pieces of Merckens caramel and stick it on top of a vanilla cookie wafer. Do this to all of your cookies and set them aside.

Step two:

Melt 1 pound of dark chocolate candy confectionery coatings in a microwave safe bowl. If you need melting instructions CLICK HERE

Step 3:

Once your candy coatings are completely melted, add a 1/2 cup of desiccated coconut to the melted coatings. Stir well.

Step 4:

Dip your caramel topped vanilla cookie wafers into your chocolate coconut mixture, coating completely. Place on a parchment sheet pan liner.

While your chocolate is still wet, you’ll want to top your cookies with more desiccated coconut (it just looks so pretty!). I was able to dip around 16-20 cookies at a time, before I had to stop to sprinkle them.

Let the chocolate coating around them harden, and ENJOY!

This recipe will use approximately 1 normal size box of vanilla cookie wafers.

Questions you may have:

Can I use a different type of coconut for this recipe?

Sure you can! We prefer desiccated coconut because its not overly sweet and has a fine texture, but feel free to experiment (we just recommend you use coconut with a fine or shredded texture.)

Can I use a different type of caramel, or caramel from a jar?

We don’t recommend using caramel syrup, or caramel from a jar, it’s just not sturdy enough for this recipe. The caramel that’s wrapped in little cubes also may not have the correct taste or consistency. We haven’t tried this recipe with a different brand of caramel, so it would be hard saying if another brand would stick to the cookie well. We always encourage people to give their ideas a try though! 

I don’t like coconut, can I leave it out?

You can absolutely leave the coconut out, you’ll just have caramel chocolate cookies, and those are equally delicious!
